I have some lovely smoked baby back ribs and some smoked pork belly.
No idea what to serve them with, any ideas?
Thanks!

Potatoes with a herby butter, in smallish cubes.
Some random veg.. Bit of grilled asparagus, also herby and buttery with a little bit of leafy stuff?

With the belly pork I would go braised sweet and sour red cabbage.

MAsh is the correct answer, with braised cabbage as has been mentioned above. The gravy/sauce will soak into the mash and blow your mind

Madame did the pork belly we had last week with a coca cola based sauce. It was unbelievable, and I recommend it 100%. I looked it up as I couldn't get my head around it being a thing, but it really is

Fries and sauerkraut, or fries and pickled red cabbage. Maybe some extra veg or salad

Something with a bit of a vinegar/lime/lemon bite, cuts through the richness of the pork belly. I’d go for a red cabbage slaw with lime and chilli. And jacket potatoes and sour cream.

Home made coleslaw and triple cooked chips, that’s all you need, don’t go all fancy!

Actually IRL it doesn't matter, as soon as ribs get to the table, 17 yr old vultures strip the carcass clean and move on corn, fries, cardboard package, plastic wrapping, it's all gone

Nothing. Why spoil the meat with junk?

Whenever I get to cook ribs or pork shoulder, my kids insist on me making this.

Edit,

This is also a great side for any BBQ.

Aspalls cider and lots of green salad. The salad to cut through the fat so you dont get indigestion later.

Delias braised cabbage, if you're feeling feisty stick some star anise in there too (no more than 5 or 6 though, else too much aniseed). Honey fan roast potatoes or marmite roast for British style. Fruity red wine with some oak

Kraut and boiled spuds for German style. Bier with this

Slaw and cornbread if you want American style as above. Cider with this one, Aspalls or a Weston.

Just how do you lot reasonable eat all that foreign crap with your fingers which is surely the default for ribs? Alright, I'll allow a receptacle for cider.
