So, a group of us were planning a stag trip to Corsica next summer but the only direct flights to and from the UK are on a Sunday (a full week is to long). Any recommendations for similar islands that can offer a similar thing to Corsica, ie canyoning, diving/snorkelling, Via ferrata and mountain biking?

No via ferrata as far as I'm aware but you'll probably find everything else.

Try Sardinia. Not been but seen lots of multi-activity holidays advertised.
