Budget? North Spain is fairly chav-free, but less guarantee of good weather. I spent a week just to the north of Platja d'Aro on the Costa Brava, no chavs there either.

Valencia is pretty nice.

Big sandy beach, pretty cool city. Not sure of hotels though

Get yourself a villa/house/apartment on airBnB in somewhere nice.
Valencia is a good call, Barcelona and Alicante worth a look at.

I tend to stay at the Paradors when I'm traveling around there which are pretty much chav free but tbh where I go is very Spanish Lorca/Aguilas ๐Ÿ™‚

For a full-on Spanish experience somewhere like Denia or Torrevieja would be an idea, they're very much Spanish costal towns with lots of Spanish families. We go to Torrevieja on a semi-regular basis - my wife's family has a place there - and while it's certainly not the most glamorous of locations it has a beach, a fun fair, decent and reasonably priced restaurants, a bit of nightlife, and even a couple of museums and things to do apart from lounging on the beach and eating too much. And no chavs to be seen ๐Ÿ™‚

Does it have to be a hotel? Some nice villas to rented, like this one...

Owned & run by a very nice fella off here, not me though.

+1 for the Paradores

Some of them are fantastic, some less so. Well worth researching them.

Can I also recommend the 'Glamping' option.
