Steaming some milk via the steam tube on my nespresso machine. And it got me thinking.

Does the volume of milk increase during steaming as the evaporated water condenses?

If not why not, as you do not see the steam coming of the milk!

Hmmm. Technically no, because as it steams off then the volume reduces. It gets more concentrated, I think, which is what I think you're thinking of.

The bubbles in the foam are caused by water in the milk turning into steam and expanding. Once the volume has increased the water returns to the milk. The steam from the steam wand escapes as you heat the milk. Probably.

The steam may condense into the milk, but remember that a small amount of water creates a lot of steam.

Food boy here: the milk turns into a foam due to the heat which changes the protein in the milk to a, relatively, stiffer structure.
