I can track it back (well a guess) to when we had a new toilet fitted. Daily the pipes will occasionally 'groan' as though there's a pressure block somewhere. Like a dead end or kink in the pipes somewhere.

Do we need something like a pressure release or something attaching to one of the water pipes?

(Cold/hot water)

Check the fill valve on your new toilet. Pressure changes when other appliances are used can result in water passing and causing weird noises.

Slight leak at the toilet valve can cause noises

A groan when passing water can be a bit worrying. Maybe a trip to your local STD clinic?
