For breakfast, they served, amongst other things, Greek yoghurt. However, as we were in Greece, they just called it yoghurt.
Fast forward to the evening meal and they served something they called Greek salad. By the same logic as breakfast, why isn't this just called "salad"?

Because there's only 1 type of yoghurt, but lots of different salads. A Greek salad is actually Horiatiki, which translates more as a country salad or farmers salad. 😋
They only call it "Greek" salad because it's what tourists call it. As dienamic says, they know it as "country salad". They call other kinds of salads different names - lettuce salad, beetroot salad, horta (horrible green stuff) etc.
Guessing:
Greek yoghurt = the only type of yoghurt they have. (See, American football / football).
Greek salad = one of many. (See, English breakfast / breakfast).
I was in Bavaria once, met a chap with a pair of German Shepard dogs, I joked they must just be called ‘Shepards’ in Germany, but apparently they’re just called ‘Germans’. I think a Shepard Dog would translate the same as Sheepdog.

Not entirely sure they are used in the same way sheepdogs are in this country; Pyrenean Mountain dogs are bred to guard sheep, not herd them, German Shepherds are probably the same. I guess I could just interrogate Google, but I can’t be arsed

We also have English sheepdogs in England. I'm sure Border collies are still called that in the Borders.
Welsh cakes however are not called Welsh cakes in Welsh.
Greeks also call Greek coffee Greek coffee. If you see what I mean...

Just to clarify German Shepherd dogs are called Deutsche Schäferhund in Germany which translates as German Shepherd dog. Where I live they are mostly called Schäferhund.
