Yep, made mine last night and the only comment from the assembled host was that these taste suspiciously like omelettes.
Same standard recipe as above. Same outcome. 10 9” pancakes. Left overs in the fridge. Han and cheese followed by lemon curd. They’re 100 kcal per pancake without topping. Kids have left home and Mrs Tired is on a diet. So here are the survivors ready for track night.
First year we have missed it. Doesn't seem to be celebrated in NZ. 😢

Over on Discord, someone made Nutella and Hob Nob pancakes this year.
Tradition here is something called a Semla, a sweet, light dough bun, top cut off, inside scooped out and replaced by ground almond paste and a lot of whipped cream. They can be eaten on their own or, as I found out, in a bowl with milk.
I like them, but they are quite large and contain about a million calories, so try to avoid them. This year though, after joking that I wanted to get my cat a tuna semla, I found a place that did a savoury version! Skagensemla... Think dill, shrimp, soured cream, lemon, salmon caviar in a savoury bun. Damn it was gorgeous.
Nadia suggests a scrambled pancake, just pour all the batter in and scramble. Sugar and lemon at the end.
