[Closed] How can market traders sell cheese and ham that isn't refrigerated?

Surely there must be some food health regulation that says they have to be kept under a certain temperature?
The stall it's on, sells it right through the summer months when it's about 80°f.

No there isn't.
both products might sweat a bit but they wouldn't necessarily go "off".

We've had a Serrano ham on the kitchen counter for the last 6 weeks, I couldn't imagine eating it straight from the fridge

This is sweaty sliced ham in a packet, not your posh variety.
I've never really thought about it before but I suppose it only says refrigerate after opening.
Why do supermarkets bother to keep it in chiller cabinets then?

Good god no, cold meat should be kept cold especially pig or chicken mush stuff.

So you don't eat a cheese sandwich if it hasn't been kept refrigerated in your backpack ?

Bought some cheese today from a specialist shop and all except the soft French cheeses are on display at room temperature which admittedly today was quite cool !

Cheese and ham are both preserved foods. Why would you want to chill them as well? What about all those Serrano hams and donkey-dick sausages you see hanging in shops and bars all around the mediterranean?

We've just had some lovely Parma ham, salami and olives as our Saturday evening watching TV snack.

Snack probably isn't the right word though. Don't think I'll want my tea/dinner* for a while.

*delete according to local dialect preference.

I doubt that they can legally sell sliced ham that isn't refrigerated . Last time I did food hygiene the law was that stuff like Parma Ham was OK to keep but if it was sliced you were allowed to display it , unrefrigerated , for one period of not more than 2 hrs . Salting and smoking are methods of preserving meat that were used well before the fridge was envented but I wouldn't fancy buying sliced ham that was stored at ambient temperature in the summer and may have spent whole days out previously if it had been displayed and not sold .

Friend managed to get a couple last year - it was really good stuff. Think the store only had about 15 though and they all went quickly.

I'm guessing the OP is the type to refrigerate their ketchup too 😕

chilled food can be kept out of legal temperature ( below 8c ) for a maximum of 4 hours .

for hot food it is 2 hours out of legal temp ( above 63c ) .

I expect it's down to length of time, too. A market trader will, I assume, expect to sell most of their wares that day. Supermarket cheese might be on display for a fortnight.

Not to mention it would be really stinky in the cheese section if they weren't refrigerated - definitely a problem for people who don't like cheese, and less sales for the supermarket...

They also work at different temps so can be just sent to a cool temp rather than refrigerate.
