What happens to these older cars if they are in good condition with an Mot. Are they resold at auctions or crushed as my mum does not want her old car crushed.case is for dealerships not the awful government scheme of a few years ago
In the last scheme they got crushed. Plenty of complaints about some good classics getting squashed.

Most of the scrappage schemes are just trade in and fluff from the dealers.
There was a proper Government scheme before all that though.

FWIW, my brother in law was offered £2.5k 'scrappage'.
My father in law persuaded him to just ask for a 'cash or I walk away' price. He was offered £2.5k 'discount' - plus he still had his old car to sell. So he did and was £600 richer from wbac.
^ exactly that. These schemes are just smoke and mirrors to get you to pay the top price they expect.
I suspect the reason the "scrapage" offers persist is the dealers worry that people are going to wait for the next government scheme rather than lose out.
Before "scrapage" was a thing they just advertized "guarenteed part exchange".

They're probably scrapped eventually, just might go through another few owners first.

We did once take our old (and totally worn out, Friday afternoon build quality) Puegeot 309 in to collect our nearly new Seat Cordoba.
Mrs_oab had me clean the Pug thoroughly and glue back on a couple of interior bits. She meanwhile got all the invoices and put them in a new folder, date ordered, with owners manual etc.
The look on her face when as we climbed into the new car at the front of the garage and a scrap truck pulled in with two cars already half mangled onboard to collect the Pug... 😆😆😆
It's a swizz to generate sales n tax.
Theres no vat on a 2nd hand car so HMRC dont see anything.

Scrapped my old T4 that had no mot , and a snapped cam belt (along with its undiagnosed internal damage). Sold the interior , alloy wheels etc (stuck an old set of steels with crap tyres on), then trailered it up to the scrappy which was just down the road from the dealer. They just picked it off the trailer with the grab and threw it on the pile.
If i knew that i would of had all the doors and glass out of it and the lights etc too.
Just tell them about your scrapper after you have agreed a price on the new one. The salesman tried to adjust the " dealer discount" on the new one to claw back some of the scrappage allowance. I wasnt happy about that, do we ended up with a deal that basically gave me £5k for the T4 rather than the £6k they were advertising .
After seeing the state of the underside of it as it was lifted , i think i got a lot more than it was worth 😁
duncancallum - not strictly true that hmrc don't see anything, if from a dealer there is vat on the margin made on the car.
