How long after you've pressed the fruit and bottled it, is it ready for consumption?

Many thanks.

I've got a load of apples off my parents and fancy giving cider a go.

Is it as simple as extracting the juice and collecting it in a sterilised container, adding yeast and letting it ferment?

Yes, except no need to add yeast, it's already present on the skins of apples.
