Just re-watched Spaced which was magnificent and which he was very good in, but in everything after Shaun of the Dead he's come over a bit smug, to me. And he always plays the same character.

I'm sure there are some good actors in there, but these films won't be their finest moments

That's a Hollywood/society problem. Men can age and have gravitas and presence, women are only there to be pretty so once they're old that's it.
It's been changing in recent years though - more mature female love interests than there used to be.
Jim Carrey is redeemed by The Truman Show and Eternal Sunshine of the Spotless Mind.
Also Man in the Moon, it's a good film.

He's not the best at being funny, IMO he's good though. Knocked Up, whilst appearing to be a stupid comedy is actually a pretty thoughtful film and he plays the role really well.

om Hanks. Can’t watch anything with him in it. Just about manage Private Ryan and the Toy things, but thats it.
It’s not that I find him unwatchable, just that he’s exactly the bloody same in every film.
Thing with Tom Hanks is that he's consistently mediocre. Not terrible, but just never more than passable. Whenever you see his name on a billboard, you know the movie is going to be some lame shit.
Most of the other actors listed above have done some excellent work. Jim Carrey was actually quite decent in Eternal Sunshine and The Truman Show, regardless of how awful most of his other stuff is. De Niro and Pachino might be sad shadows of their younger selves, but their early work included some truly great movies. Tom Hanks will always be lame though.
Edit. And Nicolas Cage is the opposite of Tom Hanks. He's either brilliant, or unbelievably awful. Never anything in between.

And the Very English Scandal series. Generally improving with age, perhaps can now simply take whatever parts he wants? Although on the basis of only early work, mostly it would be a rational dislike.
