The teeth of my lower jockey wheel on my derailleur are looking very pointy, and nothing like the teeth on the upper wheel.

I have to say I havent noticed any consequences of the teeth being so worn, so should I replace it , or just carry on riding until I start to notice a problem? It still shifts cleanly.

What actually happens when these become too worn?

I've also noticed that for not too much more than one replacement xtr jockey wheel , I can buy a whole new XT derailleur? Am I missing something? Are the XTR jockey wheels special? I presume I cant just use an XT/lower spec jockey wheel? They look identical at a glance

The teeth on the lower jockey do very little other than stopping the chain going side to side and rubbing the cage, so worn teeth there aren't a major problem. Provided the overall width of the jockeys are the same then there shouldn't be a problem running an XT or LX/Deore instead(XTR/XT have cartridge bearings, LX and lower have a plain steel bush in the lower wheel).
