I need to repair a chainstay on a carbon frame and want to know what carbon weave should I purchase?

no idea but a teaspoon must also be involved in the finished repair.

what weight cloth? With unidirectional cloth is there a certain direction or layering that I should do for a chainstay?Unidirectional

Erm, the carbon weave is just the aesthetic layer isnt it?

I'd order some lightweight bi-directional cloth from a model aircraft shop and build it up in layers.
However I fear from your question you do not know enough about working with composites to repair a stay.

Take it to a professional, I had my toad bike stay fixed for under £70.
