Quick question - will these work with the original Ultegra 785 finned pad inserts ?

No.
They work with the uberbike finned inserts which use a metal backing with the fin on and a separate pad on top of that.
Good system for hot weather and long descents but I've found the race matrix pads with the extra braking material to be the way to go in all conditions.
