I have a Sky installation booked for Monday of next week and have now been told that I have to attend a business meeting from 10:30 till 2pm. How do i know what time the sky man will arrive or can i request a time?

the installer should ring you the night before or before 8.30 am to give you a three hour time slot he may arrive in. obviously previous jobs and traffic may affect this. phone sky and rearrange?

tell whoever has told you to attend a business meeting that you are already booked into different meeting at that time so you can't attend.
