It will make no discernible difference, changing the front tyre would have a bigger affect on handling.

Your frame will be 0.5 degree steeper. Not much

Not a lot either way, but if achieved through shorter forks or more fork sag or smaller front tyre you'll also lower the BB whilst if done through headset angle cups or a larger rear tyre or less rear suspension sag you'll also raise the BB.

Just for clarity the change would come from using an internal headset cup rather than the external one presently.

Yes.

Bars/forks would still spin freely.
