Right,bear with me on this one and sorry if I'm being a numpty by asking this in the first place.
I'm about to build up a Trek Rumblefish (ie. when it arrives) with an XT 2x10 set up using 28-36 chainrings up front and an 11-36 cassette on the rear. It's got 120mm of rear travel.
The only component that is staying in-situ is the rear mech which is the long cage (SGS?) version as the bike originally comes with a 3x10 set up.
My question is will the mech that comes with it be suitable for running the 2x10 combo above or will there be too much chain in there, allowing it to flap about? Or will I need to get the shorter caged version?

You don't [i]need[/i] to get a shorter cage mech, you can if you want (it tucks away a bit neater). Long cage just means the mech can take up more slack. If you're running 2x10 you can probably get away with a mid cage (but a full short cage roadie mech may be pushing it) but there's no necessity at all.
I run a similar set up on one bike and the med mech is fine as was the long cage!
Stick with the long cage. You may need to take some links from the chain if you're dropping the 40+ tooth ring and that in itself should stop the chain flapping around. When I went to a medium cage I had to change the cassette for a 34 tooth item as the medium mech wouldn't take a 36 tooth cassette.
