Will a 10 speed SRAM X7 shifter work with a 10 speed Shimano 105 derailleur? Or maybe that should be, will it work well?

Simple rule!
Shifters and rear mechs have to be the same makes!
And the same number ratio's!
You can mix road and mountain stuff but the same rule applies!

You can mix road and mountain stuff but the same rule applies!

Not even that neat - 10 speed Shimano MTB stuff is different to road, which is cross compatible with 9/10. SRAM 10 speed is interchangeable though.

No, you can use SRAM XX mech on a road bike if you want. There are 4 rear mech pull ratios:

1) Shimano all 7/8/9 plus 10 speed road
2) Shimano 10 speed MTB
3) SRAM 9 speed
4) SRAM 10 speed road and MTB

As long as your mech and shifter match you'll be fine.
