A big ask maybe, but I'm look for a hydraulic disk fairly decent flat bar hybrid for Mrs K, Budget £350. It'll be used for cancel towpaths and off road footpaths (not single track) with the kids as well as a few roads, so I'd like a "gravel" type tyre.
It'll replace an ageing Specialized Vita FWIW.

My calibre stitch was 340 quid, and is the best value bike I've ever had, alas they're sold out. It'll be tough price point given the bike sales that have roared like a fire recently.
I think your looking at a mtb with fast rolling tyres.
At that price it's Halfords, go outdoors etc but most of their stock has sold out.

Hydraulic discs will be rare at that price won't they? Especially with all the bikes already having been bought and secondhand prices through the roof.

I got a pinnacle neon for commuting that came with hydraulics, not sure what the cheaper ones come with. Nice bike apart from the wheels which fell apart after 6 months solid commuting through winter.
Rim brakes would probably allow a better spec elsewhere on the bike too.
Ok thanks for the options. She doesn't want a womanly looking bike (pink, pale blue, bent top tube etc) but the pinnacle neon 4 at a slighter higher price looks a good bet.
The cheapest option of course is to stick some Gravel tyres on her current bike...
I've spent the past couple of weeks looking. I've had 2 orders cancelled after the shop showed stock. So the challenge is going to be finding something in stock - at any price.
I have a pinnacle lithium which I bought for family duties, holidays etc. It's basically a 29er alu frame with steel rigid fork, fat slicks and discs.
It's fantastic, I've done long rides, gravel rides everything on it. Just had the rear brake bled and realised it was the first bit of maintenance required in nearly 900 miles.
Voodoo Agwe is a decent hybrid for the money, hydraulic brakes, 10 speed 1x etc
Stock is definitely a problem... If used is an option then Boardman have been doing good flat bar 700c "fast hybrids" forever, mine is a 2013 or something, and it's still great. Helps that it's all MTB sized parts so, frinstance, hydro brakes and good light wheels were easy to find (newer ones might be different)

Great VFM - hydraulic brakes and a decent drivetrain -it was possibly over your budget but there are cheaper models
My general bimbling bike is a Pinnacle Lithium 4 which I picked up from eBay.
It’s a great bike.
I’ve been eyeing up the new Vitus Vee range. Looks good, internal hub gears too.
+1 for a Pinnacle Lithium. My partner used to own one for bumbling around town. Brilliant build quality and amazing spec for the price.
@Kryton57 - my wife has a 2013 Boardman ladies hybrid with mechanical disks BB5s that she wants to sell for a sensible price. We put Continental Tour ride 37mm tyres on it and it made it much more capable on tracks and trails.
