my general understanding was the presta are better for higher pressures?
So why do air shocks running at several times the pressure use schrader valves?

schrader are more robust valves. If you mangle presta valve on an inner tube then it's a pain but not the end of the world. Do it on your expensive forks/shock and ouch! You can easily replace the valve core of a schrader also.
