One of my brake levers has got squeaky and sticky (despite not really seeing much mud - I've only had it since March). So when I pull it, there's resistance then it suddenly moves... Which makes my braking very on/off.
The obvious solution would be to spray some oil around, but would it do any harm?
Brakes are last year's Shimano XT hyraulics.
Any wisdom appreciated...

Be very careful about spraying lubes around Hydraulics, you'll probably be fine with yours but DOT based systems can definitely have their seals damaged by certain types of lube.

Perhaps try a silicon spray which is inert and shouldn't affect any seals or try some of the actual brake fluid on the pivots?
