Got a set of creaking Nukeproof composite pedals, think they are maybe called horizon. Is it possible to strip these down and regrease them?

I don't know about the Horizons specifically, although they look basically the same as the NP Protons I run, and if they are then yes, they're perfectly serviceable. CRC lists the bearings and bushings as the same for all the NP pedals, so they must be the same inside (replacement spindles are different but I think that's just cos the Protons are narrower). They're also internally pretty much identical to Superstar Nanos and loads of other similar pedals - they're all made in the same factory in Taiwan.

You need a deep 9mm socket to undo the nut on the end of the spindle, under the dustcap. Once you get that undone you can regrease everything, and replace the bushing and the cartridge bearing if needed. The bearings are pretty solid and last years for me, the bushings sometimes wear but they're cheap to replace, a couple of quid a pop.
