Whats a decent 700c off road wheelset for around £200-250, QR, 38 max, disc.
No racing going on, just something that will take the harder hits & run bigger rubber on the old railway lines and things that pass for bridleways around here.

DT Swiss C (Cross) or G (Gravel) 1800?
Streches your budget a bit but they're wide (22 or 24 mm respectively), reasonably light and have a 130 KG weight limit so they should be pretty tough.
They are 12/12 axle as a standard but should come with Q/R adaptors in the box.
