Anyone using these for off road duties? 17mm internal width also worries me a bit, could you fit a 35 mm tyre on there?

I've had three pairs of the older 15mm version and used them to commute across heathland and woodland trails on a road bike for over ten years, no problems.
I'm no expert on tyres 35 mm wide Mavic usually quote min max tyres size?
I've run them with 32c CX tyres and 38c slicks in the past, no issues.
using the aksium disc on my cx bike as road & track wheels, not used anything bigger than a 32 but I wouldn't foresee a problem. Seem pretty tough wheels, I just had to adjust the rear bearing after a few weeks from new but they've been fine since.
They'll be fine, I'm using 40mm Xplor tyres on 17mm internal width Campag road wheels.
