...the wheel is now true. Surely it cant be that easy.?

New spoke in, tighten. Done.?

I thought it was a black art.

It can be, but if the wheel was OK before, you stand a good chance of getting it back to true-ish

Truing wheels is actually very easy though, don't let anyone tell you any different!

what he said one spoke is easy but usually more will follow - does it have even tension?

Yep.

Its building it with an all round even tension to ensure that all spokes are contributing evenly to the wheel's strength.

Even when one spoke breaks you should slack the whole wheel off replace the spoke then retension, but nobody doe's.
