Is it worth the extra over the stainless steel bearing version? I believe the bearings are twice the price of the stainless ones, but do they last twice as long?

The intention isn't extra lifetime, but reduced friction. The difference on a mountain bike will be minimal though, so unless you are a marathon racer it probably isn't worth it.
