can you follow a downloaded (someone else's)'course' whilst recording your ride?

yup. standard way it does things. You follow a course, go so fast take so many extra pub stops, that's recorded in the trace of your ride.
That's the way it's always worked on mine, and I'm pretty sure I didn't tick any extra boxes.
