My current SS has a 16t sprocket and a 36t chain ring. If I want to stop it spinning out on the flats, what should I change to without it being impossible to climb. Is there a company that makes dedicated singlespeed chainrings/cogs/cranks?

Go smaller at the back or larger at the front. If you can't find a good compromise, fit gears - that's what they were made for.
