If I wanted to go 1x11 could I used an 11 speed SRAM cassette (11-36) with Ultegra shifters?
I realise I will need a Roadlink

Yep, it's the mech+shifter that'd need to match. Roadlink indeed.

I'm running a 105 10 speed with an 11-36 xt cassette without needing a road link. The upper jockey wheel is offset so it doesn't seem to have too many problems with the bigger cassette on a single ring. I can't speak for if this carries across to 11 speed, but perhaps try it before you spend the money on a roadlink?
