It's been years since I played a modern game, but my old favourite was always Need For Speed Porsche 2000. It had good graphics (for the time) but more importantly some realistic damage effects and a great array of cars, really giving a realistic insight of Porsche history.
That, and Mario Kart 64!
grand prix legends, most realistic and difficult driving sim, somehow the word game doesn't give it justice!

played too many driving games over the years to be able to choose an all time favorite.
my favourite driving game is to see how close to recycling bins left on my road i can get some days it turns into how far can i launch one into a garden

Oh yeah.. the most fun I had for a short period of time was that off-road rally one on the PS1.. what was it called now.. was famous for having infintiely rigid blades of grass, bushes and cars but it modelled the physics of a car crash quite well so you'd be ripping along at 100mph on a straight, clip something and have the most spectacular crash ever seen on a computer game.. Plus it had a track editor so we'd do stuff like make a huge downhill straight with a jump at the bottom to see how much air we could get.. very funny.. good times

i just had to add.have just started playing trackmania.it is FANTASTIC!
what a fun game.and it runs on my old (11 years old pc) would recommend it to anyone who loves a fun driving game (+ it's free from steam)
Rally masters was great too, just remembered that gem. I had it on pc, but know it was on ps1 also. Going to track down a copy of that I think.
Metropolis Street Racer on the Dreamcast is my all time favourite!
The first driving game I played that had a realistic landscape; at the time I was amazed to recognise the landmarks around London and Tokyo. Spent hours trying to get a clear run round some the tracks and beat the (seriously hard) benchmark times. Super addictive structure with the "Kudos" points too.
I keep meaning to but GT5 for the PS3, but never seem to get round to getting it! I quite enjoy the Dirt and WRC series, but the graphics don't appear to compare to GT5.
Sega Rally. Game over yeeeeeeeaaaaaaaahhhhhhhh.
