You should be able to work it out, from the weight of you and the bike, calculate the volume of water that needs to be displaced, figure out volume of tyre required to do that, then take account of things like wheel size, how high you want to be above the water etc. Might be tiresome (geddit) if your feet are dipping in the sea as you pedal.

I do like the way he chose a car caliper rather than a motorbike one- building a monster bike is insane but using a car caliper is illogical

Incidentally, you're thinking about this the wrong way. The solution isn't bigger tyres- it's lots more normal size tyres!

Doesn't need to be a fat-bike, saw a mate in the Mendips have a hissy-fit and throw an early Cannondale into a pond, only to have it float out of reach and need wading up to the thighs to retreive.Think he was the only one not to see the funny side.
