Not doing the diet thing but have been playing around with iDiet-esque dishes just as a way exploring new avenues and get out of old habits. Some people have been trying gram flour things (socca, chips etc), and to a large extent not liking them. I think you need a pizza oven to make Socca really work, the stuff I had in Nice was really nice but I've not been able to replicate it as I can't get a fierce enough heat.
However the other night I had a play about and made some chips, these can have the same problem as socca - being over savoury - But I think the ones I made were lovely. And the reason they were lovely was because I set out to make hummous (with flour rather than whole chickpeas) and changed my mind. So nice I thought I'd share with the lovely people. Fried hummus! MaccuiskiChips.
So.....
Sift 290gm of gram flour into 1 ltr or water in a pan, whisking it as you bring it up the the boil then stirring it on a gentle heat for another 10 mins
Add the zest and juice of a lemon (lemon is technically a vegetable) a tsp of cumin powder, a tsp of cayenne pepper (by accident, it was meant to be paprika), plenty of salt and pepper a splosh of immaculately conceived ultra virgin olive oil. I was going to put some garlic in as well but forgot.
Mix that up, it should be thick, and pour onto a large lightly oiled cold dinner plate and stick it in the fridge. 10 to 20 mins later it should have set like polenta. Cut it into thin strips and fry with a flattened/torn garlic clove or two of garlic to flavour the oil (which I think worked better than adding it to the mix). Stick some chorizo in there as well too if you like. Fry til they are gold/crispy on the outside, hot and gooey inside.
