Hi

I have changed the headset on my zesty. The hope one that I've bought to replace it came with 3 thin metal spacers/ washers and I'm not sure where to put them

Any help please

They go between the split-ring and the top cover, to make sure that the plastic seal isn't compressed against the top cup.

Does the split ring sit flush in the bearing or does it stand proud by a couple of mm

It should sit quite neatly into the bearing, although I guess it may protrude a little. It depends on the ED of the steerer tube. Bear in mind that it'll compress into the bearing when you tighten the top cap to preload the bearings. To get your shims right, you really need to fully assemble and tighten the headset, then you'll see how many you need. I'd start with two and add/remove as necessary.
