    So,

    I’ve been experimenting with different ‘flavours’ of potato wedges, different combinations of herbs and spices.

    Looking for more inspiration. What have you got?

    Cut them a bit smaller, then try some salt and a little vinegar.

    Blue dragon sweet chilli dipping sauce on the wedges before cooking.

    Serve with Sour cream dip.

    We use rape seed oil (gets a nice crisp) but you could try experimenting with other oils too for flavour.

    Salt & Pepper
    Chilli flakes
    Thyme
    Rosemary + salt and pepper
    Smoked paprika + pepper
    Fennel seeds + Thyme
