    I’ve got me a new machine. Who else is a smoked meat fiend.

    Go to the website amazingribs.com Loads of info on there. Get yourself a wireless thermometer with a couple of probes. That’s what I did when I got mine. Doesn’t get used as much as I’d like (wife is a veggie) but never fails to produce amazing food.

    Oh and use weber charcoal brickets in it. They last for ages and give a good, constant temperature which is pretty important in a smoker!

    Also, get onto CountryWoodSmoke on facebook if you are on it, if not then on regular internets.

    Heat beads are also well regarded, wool and wax lighters and a decent chimney starter too.

    Pork shoulder to get used to it then move onto brisket (US and AUS have more fat in them and smoke better apparently). I’ve done many shoulders, but never ventured onto brisket as I only have a kettle.
