We were Angles, hence Angle-land. I suppose with the mixing in of the Saxons and whoever else chose to invade us over the centuries we’re no longer true Angles, merely Angle-ish.

The simple answer is language isn’t fixed so shorter form demonyms like “Scot” or “Pole” are probably only adopted if they work to the speakers ears. Engs and Ires don’t really work as words so the longer form alternative English and Irish is used instead.

A mate had to have that awkward conversation with a Pakistani lad he was working with at sea, basically along the lines of “You’re a Scot so I’m a…”. Logically it makes perfect sense, it just happens to have been hijacked as a pejorative/ignorant catch-all.
