    I want to take a load of still pictures, and then stitch them all together so when ran at high speed you get the movie effect….

    does that make sense?

    It’s not stop motion animation, that involves taking photos of an object and moving it slightly between frames.
    What the OP is asking about it time-lapse photography, taking a series of photos at intervals of a scene or object without touching it, then running the photos at full speed. Similar process, different end result.
    There is an iOS app for the iPhone/iPad, that does just what you want, called Photo Lapse.

    Yup, timelapse. If you already have Lightroom there is an excellent plug in called LRTimelapse that really helps do it properly with smooth transitions etc.

    If you happen to be doing it with a Gopro, then the Cineform software that you can get free does this exact thing for you.
    It may well do it with stills taken from another camera, presumably they are all just jpegs anyway…
