This week, I ave bin mostly eatin:
G O R S E
Discovered in recent years that you can eat gorse flowers without ill-effect. I now compare flavours depending upon geolocation/soil types. ie somewhat overpowering and bitter in Kingsford Country Park, yet light and chestnutty near the Worcestershire Beacon. Cornish gorse, on the other hand, seems uniformly and consistently good.
Better still, and far sweeter – the leaves of pennywort. I recently discovered that pennywort in coastal areas is superior, even having a salty tang from the sea air. A perfectly crisp, succulent salad leaf that is in every way better than all of the overpriced limp leaves you get in supermarkets. Fantastic! Best I’ve tried is near Tintagel. Worst – Sychnant Pass
