    just made my first flapjacks and they’re lovely! but very plain.

    anyone car to pass on their generaions-old family recipes to me?

    what do you add? nuts? raisins? fruit? particularly stuff that will turn them into energy bars for rides (but no caffeine powder, thanks!)

    200g oats
    100g raisins
    50g plain flour
    100g butter
    2 tbsp golden syrup
    50g brown sugar
    2 tbsp dessicated coconut

    1) Mix the oats, flour, raisins, coconut – ie dry ingredients
    2) Melt butter, syrup, sugar in microwave
    3) Stir into the oat mixture
    4) Grease a baking tray
    5) Wack it in and level. Press down firmly
    6) 180 deg c for 20 mins.
    7) Take it out and leave it to stand until it cools!!
    8 ) Cut into wedges whilst still ever so slightly warm

    De-lish!

    banana (is good for chewyness)

    oh yeah, and a little bit of treacle instead of the syrup gives a certain something.

    Also don’t bother with microwaving the butter, just melt in the pan before adding the rest of the stuff.

    Well, I have added all kinds of fruit, but have to say I prefer flapjack just plain and simple.

    Rocketdog once promised to send me homemade flapjacks as he makes amazing ones but he never did send them 🙁 tho he may give you the recipe!

    chocolate, mixed nuts and raisins; top class bike fuel.

    i have a recipe for anzac cookies, from the bbc i think, but i haven’t made them. they look like a nice coconuty alternative.

    I’m just munching on one of my homemade bars and remembered I meant to post on this thread. Here’s my recipe.

    225g oats
    200-250g runny honey (how much you use depends on how moist you like your bars, I use about 250g)
    50g of any seeds (I use pumpkin seeds)
    200g of any mixed fruit (raisins, dried fruits like pineapple, ginger, banana, cranberries)
    200g of any mixed nuts
    50g of butter or margarine
    Pinch of salt

    Method
    Stand the honey in a bowl of hot water to make it easier to use
    Put nuts, seeds, oats and salt in a bowl and mix together
    Melt honey and butter together in a pan
    Mix honey and dry ingredients together
    Place mixture in greased baking tray – I usually compact it down with a rolling pin.
    Bake at 180 for 12 to 15 minutes
    Turn out of tray to cool.

    This makes 16-18 bars.

    I usually put a chocolate topping on mine – green & blacks dark is my preferred option but my wife doesn’t like dark chocolate so I usually use white or milk (chocolate for cake toppings is fine). Melt the chocolate then pour over the cooling slab of yummieness.

    Rather than using loads of different nuts/fruits in the mix I sometimes do ones with just one of each – cranberry and walnut are my Christmas special 😉 Also if you use a dark chocolate topping, dried ginger works really well but don’t use it on its own. Ginger and apricot and hazelnuts also works well with a dark chocolate topping.

    Don’t get too hung up on getting the weights right – it can’t really go very wrong. I wouldn’t buy ready made bars now, mine are much nicer.

    Thanks everyone. We have some very nice honey from the wife’s granny, so I will try replacing the syrup with that as suggessed – thanks Gary.

    Still waiting for the promised recipes from Peter Poddy, IHN and Rocketdog though! (admittedly promised by other people)

    tomthumb, do you mean chocolate on top or chocolate chips within?
