Is the DT swiss listed ERD for rims nipple seat diameter or actually ERD hence includes an assumed nipple head height?

Not a clue – but if you use the DT Swiss Spoke calculator then it should get the right length spokes for you as they have their own rims in there by default.

Not for the wheelset rims though. Anyone know how I can find that detail? (Sorry to hijack, but an evening of searching and several attempts to contact DT have proved fruitless.)

The wheelset rims are the same rims they sell aftermarket (jsut with different stickers) – you just need to work out which ones which!

^Theyre listed but as the aftermarket model name. For example the E1900 30 will be an E532 rim or an EX1501 25 will be an EX 471.

The only XMC rim they list is the 350, which looks a completely different depth to the XMC1200 rim? And gives much longer spoke length recommendations than is actually fitted when put into the spoke calc.

IIRC they don’t sell the XMC1200 rim aftermarket.
