The alternative is a PAYG sim just for biking to which you divert all calls, which might be easier

I'm thinking about upgrading my phone to an iPhone 4s, which is well and good, however I tend to swop between phones a bit, eg using an older phone for when I'm out on the bike, and I'm wondering how that might work with a micro sim?
