This year I have new winter boots and new shimano cleats to fit.

These things will be hammered though all conditions in the alps for probably 4 months.
So, worth adding stainless or Ti bolts to prevent corrosion?

My cleats are always fine after a full winters commuting with a bit of grease on them. Back the bolts off every couple of weeks then retighten.

No, just add some antiseize compound when you fit them and don’t overtighten like most (self included) do

Put a blob of hot melt glue inside the bolt holes, will stop them getting chewed up.

Copper grease on the threads, then blob of mastic/hot melt glue in the hex holes should sort you out.

Hold a lighter to the cleat until it’s warm* to touch, then melt candle wax all over the bolts/cleats to seal the bottom of the shoe.

*only needs to be hot enough to get the wax to stick to it, doesn’t need to be melting the shoe.
