I’m sorry, I can’t comment on the Manitous, but I did my son’s Fox forks myself and it only took 30 mins or so. Needs a few special bits and pieces, notably shock fluid (upper and lower – they are different) and a chamferless socket.

The problem with sending it off is that you’ll probably spend more on postage than on the job itself. I would have recommended tftuned, but it seems they are picky on which Manitou forks they’ll touch:
