    Inspired by my mum absolutely coming up trumps yesterday

    We were out with the kids, playing in the snow and cold. All good fun! then popped round to the rentals for tea, to be presented with a massive Lancashire Hot Pot that’d been cooking for hours, with crusty pastry, and pickled red cabbage. Mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm

    Your personal favourites please oh discerning culinary STW ones? Lets have some recipes. Inspire me what to cook for this cold, snowy weather

    It was cherry pie and custard…

    However since recent dieting, i now find out that the weekend that Cherry pie and custard leaves me feeling very sick 🙁

    My new ” easy” comfort favourite

    Chilli fries

    Cook skinny oven chips – then transfer to an oven proof dish and smother with a can of chilli and grated cheese. Return to the oven till its all delicious

    Sausage and mash. It has to be a good quality Cumberland sausage (fnar), also with my wife’s killer onion gravy.

    OMG, guess what we had for yesterday’s roast? A big ol’ smoked gammon joint. Was gonna do a carbonara with the leftovers but may now have to indulge in some cockney broth!

    Gulasch with parsley potatoes and peas. Followed by a variant of bread and butter (currently pannetone) pudding and custard.

    Chips on a buttered oven bottom.

    Chips about 15mm deep cut from Maris Piper spuds.

    Fried in fresh vegetable oil until crispy and yellow.

    Liberally apply Anchor butter to a fresh oven bottom 15cm diameter.

    Add chips to oven bum with lashings of salt & vinegar.
    I like it when the vinegar soaks into the bread.

    Get stuck in and no it’s not rude to lick the dribbles of butter from your wrists!

    As a lancastrian, I feel obliged to point out that lancashire Hotpot doesn’t have a crust. Yours was pie (equally as good,if not better IMHO)

    came in from a cold ride yesterday to a bubbling pot of home made Minestrone courtesy of mrs iainc – first time using the Hairy Bikers recipe and totally delicious 🙂
