    2hrs riding and the newly installed flats for messing in the snow and it seems that the R pedal has completely stripped the XTR crank.

    Now what? Is there a solution to this that would allow me NOT to have to buy new cranks?

    I think you can get helicoils fitted. Try googling it. Will be cheaper than new XTR cranks!
