I’ve got a Shimano M756 XT rear hub. A bit of Googling suggests most Shimano rear hubs need 1/4 inch bearings, 9 per side. Does that sound right? Any recommended suppliers?

Correct. If your existing ones are shiny and smooth then they are fine.

Not sure who does good ones, cheap weldite ones are shite though.
