Is unlocking an iphone 4s different to jailbreaking? An unlocked iphone ca be used on any network, whereas a jailbroken iphone can use any producer of app, is that correct?

That is how I understand it.
Jailbreaking still carries a significant risk of turning your phone into and expensive paperweight. Most networks offer an unlocking service.

And once you are out of contract, your service provider is required to perform the unlock for you. You just need to give them a call.
Vodafone did mine a couple of weeks ago. They just seem to send a text or something.

I've been jailbreaking for many years.. Never turned into paperweight, that's exactly what Apple want you to think will happen.. Even if it did, you can restore and put it back.
If you are outside your contract your SP should do it within 48hr's free of charge. Or pop down your local market, and they can usually do it for £5.
