What effect will a longer stem have on the handling of the bike?

Stretch you out more; head down and more neck/back pain (unless racing snake).

Short stem = quick and direct steering.
    Long stem = Narrowboat.

Right. I’ll give it a go and see how I get on 😛

    Will it improve climbing?

It will help as it will pull some of your weight forward. The flip side is that your weight will still be pulled forward for the down hill, which probably will not help.
