We've just built up apair of LX brakes I've had lying around, however when we came to fill them with oil we couldn't get the oil to move down the hose from the reservoir to the caliper. It's the same both front and rear suggesting we've done something daft somewhere.
Both caliper and lever end have nut, olive and insert, in that order as per the instructions. When you pull the lever you can hear air at the caliper suggesting air is getting through but the oil isn't. Any ideas?

Starting with the obvious, I assume that you have the bleed nipple open? I think that the procedure is open it, pull the lever, close it then release the lever.
Yeah tried different amounts of open. Maybe we needed to shut it again before pulling the lever again?
yes need to close nipple when you release the lever to stop the oil going back up the hose.

I've got two sets of Shimano and had all sorts of issues bleading them. However, I did read some instructions beforehand to get the basics.
You close the nipple to stop air being sucked up!
Sometimes this happens with shimano brakes(especially with hoses void of min-oil)
Best bet is fill a syringe, remove reservoir cap/diaphram, attach syringe to bleed nipple, open bleed nipple 1/4-1/2 turn. Use syringe to force oil into caliper, use old rag to soak up excess spillage at reservoir, have a pint/cup o tea.
