    Chilli is a staple in our house, and has been for as long as I can remember.

    I try to serve it with different side dishes (refried beans, coleslaw, potato wedges, rice) but am always looking for new ideas. I know there are a lot of cooking enthusiasts on here so come on, share your finest, inspire me.

    We had our chilli with these the other night. I found the paper peeled off better when they were maybe 3-4mm thick rather that really thin as suggested. Cornmeal flat breads

    Also try lots of different slaw recipes. Some with yoghurt, some with a vinegar dressing, different veg – that sort of thing. We often have raw spring greens with white wine vinegar and a few cumin or caraway seeds – a nice alternative to plain lettuce. Chopped fresh tomatoes with salt and lime juice rather than full on salsa is nice too.

    Eat chilli a lot. Was the first meal I learned to cook 30 years ago, and for me it never gets old! These are the usuals: (mix and match)

    -Home-made guacamole
    -Refried beans (buy tinned but stir in a sprinkle of cumin powder, a little chilli powder and a squirt of lemon juice before heating. Microwave-safe tubs are useful here.
    -Cold rice salads (herby salads are good, with fresh coriander, diced fresh tomatoes, red onion, sweetcorn). See also:
    -Mango and red onion salsa (again with fresh coriander, lime juice)
    -Home-made tomato salsa
    -Boiled or steamed plain rice
    -Hot nachos with jalapeños
    -Cheesy jacket spuds
    -Homemade black beans with rice and fresh coriander/mango salad
    -Roasted vegetables (selection of, ie toms, courgette, parsnips, onion, carrots, beet etc)

    It’s all so easy to make as well.

    I do a guacamole.

    Scoop out the avocado, smash or crush it into a pulp mix in lime juice and fresh ground black pepper.

    Cornbread is my standard. Sometimes make a salsa or just a bit of chopped onion. Sour cream and cheese are of course ubiquitous, not sure they really qualify as side dishes though!

    I tend to put lots of beans in the chilli rather than bother with them as a extra side dish.

    Mango and red onion recipe please

    Prefer to keep it simple with good fresh ingredients, this is close enough (I’d maybe use a little less mango or else a smallish one.

    Proper oven cooked jackets
    More chilli

    Home made salsa.

    Half a finely chopped onion
    Three or four good sized tomatoes chopped into chunks
    Lots of chopped fresh coriander
    Chopped fresh chillies, mild or hot depending on who’s eating it
    Lots of crushed garlic
    Juice of 1 fresh squeezed lime
    Ground black pepper to taste

    Mix ingredients and leave covered in the fridge for about an hour prior to serving.

    If you’re feeling brave you can also add cooked nettles 😀

    ^ shoulder of pork. Slow cook it, shred it then cook chilli as normal.

    – Puy lentil and mushroom (make up the lentils by cooking in stock until plump and al dente, then add with chopped mushies to yr pre-prepped base sauce until cooked)
    – Minced mutton or lamb instead of beef is excellent
    – Chilli verde (pork in a spicy green chilli sauce)

    Also google recipes for mancha manteles, should keep you busy 🙂

    Cheesy corn dip has always gone down a storm when I’ve made it.

    Defrosted frozen sweetcorn
    Spring onions
    50/50 mix of sour cream and mayo
    Crumbled feta
    Grated mild cheese, Monterrey Jack if you can find it if not gruyere
    Coriander
    Chillies to taste

    garlic bread with chili is a stunner.

    I found an easy way to make it ( actually nicked it from a vendor at Glastonbury Festival) Takes about 5 mins, so useful if you forgot to make it or just want a quick job of it.

    1. Crush/mince garlic
    2. Add to your butter, spread or oil and place in a pan or covered microwaveable container. Add seasoning and herbs if you wish.
    3 Cut a sandwich baguette in half lengthways
    4. Heat garlic mix until oil or butter begins to pop and crackle and garlic starts browning a little, while you:
    5. Toast baguettes under grill or on BBQ
    6. Pour or ladle the hot garlic butter onto each half of toasted baguette and serve immediately.
